Recipe: Jenny's Apricot Mustard Baked Chicken

Have you heard of Jenny Rosenstrach? The genius mind behind the blog (and book!) Dinner: A Love Story advocates carving time out for family dinner and is an amazingly talented chef. Her book, that came out this past autumn, is filled with wonderful recipes and stories that are sure to warm your bellies and your hearts. One of those very wonderful recipes is for apricot mustard baked chicken. I adapted mine a little bit to make it a little healthier, but you can find the original recipe here or in her fantastic book.


First, grab your ingredients.


4-5 boneless, skinless chicken breasts (not pictured)
salt and pepper 
2/3 cup apricot jam
2 tbsp coarse grain mustard
1 tsp thyme
3 tbsp water

Then, preheat your oven to 400 degrees and wrap a baking sheet in tin foil. Lightly season your chicken breasts with salt and pepper and cook for 10 minutes at 400 degrees. 



While the chicken is cooking, place the apricot jam, mustard, thyme and water together in a small saucepan.


Bring to a boil, then let it simmer as it thickens for a few more minutes. Remove the chicken from the oven and brush the apricot mustard sauce over the chicken - and feel free to be extra generous with the sauce!


Bake in the oven (at 400) for 12-15 minutes, until beginning to crisp. 


Remove and serve a top a bed of salad greens.


This was so delicious - and it went perfectly with a little caesar salad! The chicken (with sauce) is under 200 calories, and even with the greens and a little bit of dressing, the entire dinner comes in around 300 calories. I love when a dinner with so few calories packs such a punch when it comes to flavor! And, if you're looking for a party appetizer or SuperBowl snack - this would be a great marinade for chicken wings!
