Recipe: Baked Macaroni and Cheese

Good Morning and Happy Tuesday! Did you all stay home and watch the Inauguration yesterday? And did you cry, like I did? It was so incredible and I loved watching every moment of it! But today, I am back into the swing of things - back to school AND back to a delicious food recipe! Last weekend, I made the most amazing comfort food dish - baked macaroni and cheese. I found the recipe at Blissful and Domestic and it did not disappoint! 


First, gather your ingredients.


1/3 cup butter, for sauce
3 cups milk
1/2 cup sour cream
4 oz. cream cheese
2 tsp salt
1/4 tsp ground nutmeg
1/4 tsp cayenne pepper
1 tsp dry mustard
1/2 tsp black pepper
4 cups grated cheddar cheese
1/2 cup grated parmesan cheese
1 pound cooked elbow macaroni
1 cup Italian bread crumbs
2 tbsp melted butter, for topping
Then, prepare a 2 (for overflowing) or 3 (for well fitting) quart baking dish by greasing it well and preheat the oven to 350 degrees.

Prepare your topping by mixing together the last two ingredients - the 2 tbsp melted butter and the bread crumbs - with a fork in a small bowl. Set aside.


This is also a great time to get going on that cooked macaroni. Boil your water, add the elbow mac, etc. Make pasta. 

Then, using a large sauce pan, mix together the flour and the 1/3 cup of butter over a medium heat, mixing slowly.


Once smooth, add the milk and stir until it has thickened and is without any more lumps. Then add the sour cream and the cream cheese, as well as the spices.


Combine thoroughly, and then add in the final two cheeses - cheddar and parmesan.




Mix well and add in the elbow macaroni.



Stir until all of the macaroni has been well coated by the cheese sauce. Pour into your baking dish and coat with your crumb topping that you set aside earlier.



Bake for 45 minutes at 350 degrees, or until the top has just begun to brown.


 I served this with garlic bread and it was delicious! For just two of us, it was a lot of macaroni and cheese, but for a family of 4+, this would be a perfect - easy and inexpensive - winter meal and probably give you some leftovers. Enjoy!
