Recipe: Garlic Mustard Marinade

Good Morning! If you're out on the east coast like me, has this been enough rain for you? While I'm not so thrilled about the constant barrage of gloomy weather, I am glad that this means that Fall is finally here! And, today, I have a great marinade for you - a garlic mustard marinade. This marinade is easy to make and only uses a few ingredients!
 
 
1 cup of dijon mustard
2 cloves of garlic, minced
1/2 lemon, juiced
salt and pepper, to taste
 
First, mix together the cup of mustard, minced garlic and lemon juice.
 
 
Then, add salt and pepper.
 
 
I know, this has been really hard so far, but there is one last step. Bear with me now. Finally, mix it all together.
 
 
Easy and delicious! And it's not too garlicky or too mustardy - the lemon cuts down on that - so this is sure to be a marinade that everyone will love! You can use this on chicken, pork or fish. I made it and used it to marinade chicken breasts that I stored in the freezer as an easy weeknight freezer meal.
 
 
Served with a skinny loaded baked potato (light butter, low fat sour cream and parmesan cheese), and a top a small bed of rice, this made the perfect weeknight meal to share with Josh! Enjoy!
