Recipe: Fire Island Breakfast

One of my favorite parts about visiting Fire Island is eating breakfast. Usually, breakfast consists of a walk to the market for fresh bagels, but sometimes we get to be a little creative. For Hanukkah this past year, I got Phyllis a waffle maker and we got to use it this weekend. The machine is so easy to use and I definitely recommend it as a fun gift for your favorite chef!


In order to make these amazing waffles, first gather your ingredients...


1 Package of Waffle Mix (Yes, this is gluten free. No, it didn't taste any different.)
1 2/3 cup of milk (or water, for a thinner waffle)
3 eggs
1 tbsp vegetable oil

In a large bowl, combine the mix, eggs, milk and vegetable oil. If it's too thick, just add a little bit of water to make it smoother.

Then, using your waffle maker, pour a little batter into it (grease it first!) and spread out the batter evenly. Cook according to your waffle maker's directions.


These waffles are so delicious and Phyllis cut up some delicious fruit to go along with them.



We enjoyed these with our own mixes of fruit, syrup and butter - and they were the perfect brunch to end the vacation with!
 


 
What's your favorite weekend breakfast? Am I the only one who butters first, then cuts up the entire waffle (or pancake) and then adds syrup? (Yes, the one on the bottom right is mine.)
