One Pot Wonder {Chicken & Potatoes}

I'm not the only one out there feeling busy and overwhelmed with life at times, am I? Yea, I didn't think so. I love coming home every night and cooking, but when it comes to the after-dinner part - the cleaning up part - that I don't love nearly as much. So many pans and utensils get used, sometimes multiple appliances and gadgets, and by the time I've finished cooking and we've enjoyed our meal, I just don't feel like doing anything else. Except that dishes don't find their way into the dishwasher by themselves, and if the sink doesn't get cleaned out at night, then I have to rush to do it in the morning after the puppy is back to sleep, but before I leave for work, and I think you can all guess how well that goes. So, for happier evenings and happier mornings, I have a delicious one pot meal for you to add to your recipe arsenal: chicken and potatoes (with some other stuff too!). 


First, gather up your ingredients.


1 lb. boneless skinless chicken breasts (Plain or Pre-Seasoned)
5-8 red potatoes
1 shallot
1/2 lemon
1 - 2 heads of broccoli
2 tbsp olive oil
1/2 tsp garlic powder
1/2 tsp oregano
1/2 tsp basil
1/2 tsp crushed red pepper
salt and pepper to taste
parsley, to garnish

Note: Aside from the chicken, potatoes and olive oil, much of the ingredients for this dish are optional. I had broccoli, so that's what I used as a veggie, but you could also easily use peppers, mushrooms, or asparagus. You could also alter the spices to fit your tastes - adding more or less as your desire. 

Get out your 9x13 baking dish (your one pot) and preheat the oven to 400 degrees. Then, chop up the potatoes, shallots and broccoli, and place them into your pan.




Add in garlic powder, oregano, basil, crushed red pepper, salt and pepper. Drizzle olive oil and juice from half of the lemon over the top and mix together. 


Finally, take your chicken breasts (I used pre-seasoned ones because I like the single packets and my grocery store was out of the plain ones) and add them to the pan. 


Place pan in the oven for 25 minutes. Remove, stir and place back in for another 5 minutes. Remove and serve immediately.



Place leftovers in plastic container and rinse your pan out and pop in the dishwasher - along with cutting board and knife - and voila! - your cooking clean up is finished! 

I kind of just threw this meal together - and the only thing that I might change would be that if you like your potatoes super soft, then you may want to roast the potatoes, veggie and onion  mixture for about 10 minutes before adding the chicken, and then follow the remaining directions from that point. I served this with a quick and easy garlic bread and it was definitely a success - a perfect weeknight meal!

    1. Definitely! Put everything in your crock pot, instead of the baking dish for 6 to 8 hours on low, or 3 to 4 hours on high. Enjoy!
