Recipe: Mozzarella & Tomato Melt

Did you know that April is National Grilled Cheese month? Well, I have a confession to make, I'm not very good at making grilled cheese sandwiches. I know, I know, who can't make a grilled cheese sandwich? For the record, I can make them, but I just find it to be a bit of hassle - turning it over so many times to avoid burning, making sure the actual sandwich stays together, melting the cheese just enough without burning it ... the list goes on and on. And so, I much prefer making what I refer to as cheese melts - sandwiches in the toaster oven that sort of resemble grilled cheese sandwiches, except that there's no grilling (or saute-ing or panini-ing) involved.


One of my favorite melts is the mozzarella and tomato melt. The key to a really good tasting mozz and tomato melt is in the mozzarella - make sure it's fresh and you can't go wrong. To make this melt, first grab your ingredients. You'll need bread, mozzarella, tomato, olive oil and balsalmic vinegar.


Then slice your bread (I used rosemary focaccia) into thin, sandwich bread size slices.


Drizzle about 1 - 1 1/2 tablespoons of olive oil onto your bread.


Then, slice your mozzarella into 1/4 inch slices and place 2 or 3 slices on top of one half of your sandwich.


Do the same with the tomato - slicing it into 1/4 inch slices and place 2 on top of the other half of your sandwich.


Then, place both halves in the toaster oven on the toast setting for 3 to 4 minutes or until cheese is melting and bread is lightly browned.


After you remove from the toaster oven, drizzle balsamic vinegar over each half and bring them together to make the sandwich.


Finally, slice your mozzarella and tomato melt in half and enjoy!

    1. Hi, thanks for your comment! I prefer less gooey mozzerella, but if you prefer it gooier you can definitely keep in the toaster oven for a little longer - until it reaches your desired melting level.
