Rosemary Lamb Chops

Sometimes I get stuck in a cooking rut. I'm sure I'm not the only one though - cooking hundreds of meals a year could lead anyone into a bit of a rut from time to time. And every once in awhile, I like to bring in favorite, but less used, ingredients to play around with. When I went to the store and picked up these lamb chops, I was definitely in a mood to elevate our regular weeknight dinner.


While this dinner may have cost a little bit more (although not too much more) than our more regularly used proteins (steak tips, chicken breast, pork chops), it was definitely worth it and incredibly delicious.


In order to make this dish, you'll need...

6 lamb chops (not shown)
1/4 olive oil
3 cloves of garlic, chopped
1 tsp thyme leaves
1 sprig of rosemary
1/2 tsp of paprika
salt

First, place the olive oil, garlic, thyme, rosemary and paprika into your food processor. Then, pulse until well mixed.


Then, pour the rosemary-olive oil mixture over the lamb chops, rubbing the mixture into the chops.


Heat a large grill pan or skillet over medium-high heat and spray with Pam cooking spray. Then, place the lamb chops in the hot pan.



Cook for approximately 3 minutes on each side, a minute longer if you'd like well done chops, but a minute less if you prefer them more seared than medium. Remove from heat when done and serve over your favorite side.


We enjoyed these over a bit of leftover polenta and they were delicious! The marinade isn't overwhelming and is a perfect complement to the lamb chops. The recipe makes a perfect amount for 2 people (3 chops each) but can be doubled or tripled to make more.
