Perfectly Seared Flank Steak

I'm not sure I've ever wanted one more weekend day quite like I did this weekend. I just needed a bit more time to do some baking and finish up the project I was working on. But, I did get to spend some time in the kitchen, and I made this delicious flank steak with an incredible corn salsa to top it. I'm going to split this post into two, so that it doesn't get too long, and I'll be back tomorrow with the salsa recipe. 


For simple but juicy flank steak, all need are three ingredients: salt, pepper and olive oil - and the steak of course!


First, I drizzle a bit of olive oil (about 1-2 tbsp depending on size) over each piece of flank steak, and then I use a spoon to spread it around.


Then, I coat the flank steak with salt and pepper. You can add more or less spice depending on your preferences, but when I'm pairing the steak with something else (aside from rice or potatoes), then I tend not to overpower it with spice. 


Finally, I flip the flank steak over, and repeat on the other side. Then, depending on the thickness of the steak, I cook it over medium high heat for about 3-5 minutes on each side for a medium-rare to medium doneness. Then, I sliced it up, and covered it with corn salsa in a dish for serving.



And voila! - perfect summer dinner! I used our new grill pan and this last picture does have a filter on it, using instagram, but it was perfectly cooked. I love searing meat in the summertime - it makes dinner so much easier!
