Black Bean Corn Summer Salsa

Yesterday, I shared my quick and easy go to way to cook flank steak perfectly. Today, I want to share with you my new favorite recipe for a go-to summer side: black bean corn salsa. This recipe has been adapted from a Cooking with Kids book from Paula Deen and I first got it from one of our good friends after I fell in love with it when she brought it to a party. This works as a dip for chips, a side, or a topping for flank steak.


This salsa only takes about 15-20 minutes to prep, and then it can hang out in your refrigerator until you're ready to serve it. Here are the ingredients you'll need, but if you're bringing it to a party, just double the recipe to have enough to go around.



1 14oz can of black beans, drained (but not rinsed)
1/2 of 1 10 oz bag of frozen whole kernel sweet corn
2 plum tomatoes, chopped
1/4 green bell pepper, chopped
1 small red onion, chopped
1 clove of garlic, chopped 
1 lime, juiced
1 tbsp balsamic vinegar
1 tbsp olive oil
1 tsp cumin
1 tsp creole seasoning (I love Tony C's!)
2 tbsp of parsley, chopped for garnish

First, cook your half bag of sweet corn in a small sauce pan over medium-low heat for 5-8 minutes, until cooked through.


While the corn is warming on the stove, combine the black beans, tomatoes, green pepper, onion and garlic into a bowl and mix it all together.


After the corn is cooked through, add to the black bean mixture.


Then, in a separate bowl, stir together the olive oil, balsamic vinegar, cumin, creole seasoning and lime juice. 

Not the most appetizing picture, but this is what it looks like.
Pour this over the corn and black bean mixture and stir to mix everything together. Then store in the refrigerator until you're ready to use it!


Such an easy (and so delicious!) summer side. And the best part? It goes with almost everything! I paired it with a perfectly seared flank steak - and this will definitely be a dinner repeated throughout the summer!
