Dark Chocolate S'Mores Bars

In case you didn't know, I love chocolate. In drinks, in snacks, in breakfast, in dessert - and even in dinner from time to time. Whether it's a chocolate covered espresso bean, a skinny cow snack, or an oreo (or two!) before bed, I usually have at least a little bit of chocolate every day. And, when I came across this recipe, I knew that I had to try it. I adapted it a little bit, and I am totally in love with the end result - these dark chocolate s'mores bars get two thumbs up from me and Josh!


All you need to make this are the following ingredients, plus an egg, water and vegetable oil for the brownies.


1 18 oz box dark chocolate brownie mix, plus ingredients for fudge like brownies
1 10 oz bag full size marshmallows
9 graham crackers, 6-7 for layering and 2-3 for crumbling
6 snack size hershey bars
also: nonstick baking spray, 9x13 pan, and aluminum foil

First, preheat your oven to 350 degrees. Then, mix the brownies according to the package directions for fudge-like brownies and set aside. (Note: Try not to eat too much batter, otherwise you won't have enough for the s'mores bars.)



Then, cover the 9x13 pan with aluminum foil and coat with baking spray.



Cover the bottom in a layer of graham crackers. I used about 7, broken them to fit accordingly, and rounded the edges of the corner ones.



Pour the brownie batter over the graham cracker layer and bake in the over for 26-30 minutes, until you can insert a toothpick into the center of the batter and it comes out clean.


Remove from the oven and cover in marshmallows. The marshmallows will not cover the entire pan, but they will melt later and form accordingly.


Crush up 2-3 graham crackers, according to your graham cracker preference, and sprinkle them over the top of the marshmallows.



Then, take four 6 snack size Hershey bars, break them up and spread them over the marshmallow graham cracker topping.




Return to the oven for 7-10 minutes, until the marshmallow layer has melted and begun to turn a golden brown.


Remove from the oven and let set for about an hour. Then, remove from the pan and slice for serving!


Enjoy with a big glass of milk and large scoop of ice cream - chocolate chip cookie dough was a perfect complement to this dessert bar!


I'm not a huge fan of camping, but I absolutely love s'mores. And these dark chocolate, extra gooey s'mores bars fit the summer dessert bill perfectly!
