Recipe: Lemon Butter Salmon

Note: I found the salmon pictures! Hurrah! Hope you enjoy this as much as I did!

Can I make a confession? I really don't like cooked salmon. Tuna, halibut, red snapper? Sure. Tilapia or mahi mahi? I'm in. But salmon? Unless it is smoked on my bagel, or raw in my sushi, I really just am not a fan of the fishy salmon taste. Until now.

I am bound and determine to start liking salmon and so a few weeks ago, I set out to make a salmon recipe that I would love. I will warn you, this recipe is not for the health conscious (although if you like the taste of actual salmon, you could just reduce the butter or oil amount), but it is delicious.

To make this, get the following ingredients:


Salmon (for 2 servings)

1 pound of salmon fillets
1 large lemon
1 stick of butter (8 tbsp)
salt and pepper

Sauce

1/2 stick of butter (4 tbsp)
1 tbsp garlic powder
1/4 cup of olive oil

First, preheat your oven to 350 degrees. Then, tear aluminum sheets for your salmon and set them on the counter.


Slice your lemons into thin slices. Using one large lemon, this will produce 10 thin slices in total - 5 to be layered on each aluminum sheet.


Then, slice the salmon in half and place each half on top of a lemon pile.



Split the stick of butter in half, and then slice each half lengthwise. Place two quarters on top of each piece of salmon and cover with a sprinkling of salt and pepper.


Wrap in the tin foil and bake in the oven for 20 minutes. 


After its been cooking for 15 minutes, make the sauce. First, place the butter and olive oil in a pan over medium heat.


Add the garlic powder. Stir constantly until the butter is completely melted into the oil, but make sure not to let the sauce burn. 



Remove the salmon from the foil packet, serve over veggies or rice (or both!), and top with the garlic butter sauce.


Wow - sauce overload! But it is delicious! And although not the healthiest dish (and by not the healthiest, I mean that this dish is really not healthy at all), this was incredibly delicious and the sauce combined with bites of salmon and rice was one of my favorite dinner combinations that I created this Winter.

  1. Can you believe that I have only had salmon once? This may just change my opinion on it being too fishy. I will have to try it.
