Recipe: Cheesy Breaded Chicken

This morning, my thoughts and prayers are with those in Moore, Oklahoma, suffering through this horrific event. If you want to donate to help those in need, there are some great ways to do that, including through these sites: American Red Cross, Samaritan's Purse, Salvation Army and Operation USA.

A few months ago, I found this amazing recipe from Sweet Tooth Love on Pinterest. I kept pretty closely to the recipe, but if you like crispier chicken and parsley - then definitely head over to the original recipe. For a less crispy - and slightly healthier - version, read on!


First, I grabbed my ingredients:

1 lb. boneless chicken breasts, each cut into 2-3 pieces
2/3 cup skim milk
1 cup shredded cheddar cheese
1 1/2 cups Italian breadcrumbs
1 can of Progresso Creamy Three Cheese recipe starters

Then I preheated my oven to 400 degrees and covered my pan with foil, then sprayed it with non-stick cooking spray. Then I placed the milk, bread crumbs, and cheese into 3 separate bowls - creating an assembly area of sorts. I placed my foil covered pan right next to my set up area to create less mess.


Then, I dunked each piece of chicken in the milk, then in the breadcrumbs, and finally into the cheese. The cheese doesn't exactly stick to the chicken on its own very well, but you can always add a bit more on top of each piece of chicken. As you finish each piece, place it on to your greased baking sheet.


Once your tray is filled, use another piece of foil to cover the chicken - creating a tent like effect. Then, place in the oven for 25 minutes.


After the chicken has been in the oven for 15 minutes, put the recipe starter creamy cheese sauce into a small saucepan and bring to a boil, then reduce to simmer until the chicken is ready to be removed from the oven.


Remove the chicken from the oven and take off the foil tent. You will have beautifully melted cheese atop your breaded chicken. (For the crispier version, go to the original recipe, here.)


Serve topped with the creamy Progresso sauce - just a little bit goes a long way!


A delicious recipe - and not too unhealthy either! I served this with a side salad and we both absolutely loved it - this is one recipe we'll be making time and time again! I had never used Progresso recipe starters before, but it was an easy way to add a boost of flavor to a weeknight dinner!
