Recipe: Fig & Gorgonzola Mini-Pizza

About a year ago, I discovered the deliciousness of fig and gorgonzola pizza. Not actually liking figs or gorgonzola prior to this, I was shocked to find out that together, fig and gorgonzola can take on the world. A few months after that I made another discovery, I actually loved figs. So I went out and bought fig jam to use on toast and english muffins and crackers, and really anything else that might call for jam. And then, a few weeks ago, I finally put my love of fig jam and pizza together on my own and created my own fig & gorgonzola pizza.


This pizza is really simple to make, all you need are these ingredients:


Fig Jam, 3-4 tbsp
Gorgonzola, about 2 tbsp
Prosciutto, 1 slice 
Balsalmic Vinegar, drizzle (optional)
1 Mini-Pizza Crust (not pictured), I used Boboli

First, preheat your oven per the directions on the crust package. While your oven is preheating, use a spoon to spread the fig jam over the crust, leaving room at the edges.


Then, spread the 2 tbsp of gorgonzola over the fig jam. If you like gorgonzola a lot, feel free to add more.


Cook in the oven as directed. When done, remove from the oven. Then, take the slice of prosciutto and tear into a few pieces. Place those pieces over the pizza.


Finally, slice into 6 pieces, drizzle a bit of balsamic vinegar over the top, and enjoy!


I ate this for dinner one night, but it could definitely be used as a dinner or party appetizer for guests to enjoy - it is a perfect blend of sweet and savory!
