Recipe: Blueberry Scones

With the start of my new job this month, came a new morning schedule - one that no longer allows me to linger over a bowl of Special K at 10 am - and I had to come up with something that would be delicious, and something that I could eat on the go. Earlier this year, I made some Turkey Bacon Pepperjack Scones and I decided that making scones with blueberries, would be a perfect, on the go breakfast for me to enjoy every morning.


Fresh blueberries are key for this delicious breakfast scone! But, you need a little bit more than just blueberries...


2 cups of flour
3 tablespoons of sugar
1 1/2 teaspoons baking soda
1/2 teaspoon salt
5 tablespoons butter, chilled
1/2 cup milk
1/4 teaspoon vanilla
1 large egg white
1 cup blueberries
milk and sugar, for coating

First, mix together your flour, sugar, baking soda, and salt. Then, cut in the butter to form the dough.


In a separate bowl, mix together egg white, milk and vanilla. Add the egg mixture into your dough, mix together, and then turn out your dough onto a floured surface.


Add blueberries, and continue to knead with the blueberries, adding more as you knead. By adding just a few blueberries at a time, they will be worked through the dough completely.


Once the blueberries have been worked into the dough, round it out and partially cut into wedges. Brush with milk and sprinkle with sugar.


Bake on parchment paper at 425 degrees for 18-22 minutes. Remove, slice, and enjoy!


These scones, fresh out of the oven, smelled incredible! In the morning, all you need to do is heat one up in your microwave or toaster oven and enjoy alone or with your morning coffee! Happy Wednesday!

  1. When you were listing the ingredients you said baking POWDER, but then within the very first instructions you say baking SODA. My question would be which is it?
