Recipe: Oven Baked Salmon Fillet {Dinner for Two}

Good Morning! Did you all have an incredible weekend? While we may not have gotten nearly as much done as we may have liked, I did have a successful trip to IKEA, worked on our new table a bit more, and we got to share in some really special moments with some good friends. 
 
This morning, I want to share an awesome salmon dinner recipe for you that I made for Josh and I to try. We're trying to eat more fish and I'm hoping to find more recipes that help both of us enjoy it. While this did allow for a bit of the fishy taste of salmon to come through, it wasn't a lot and we both thought it was delicious! 
 

Mmm... delicious! And, easy! To make the salmon all you need is salmon and a delicious marinade. We used Guy Fieri's Pacific Rim Wok Sauce and it is the perfect complement to the salmon.
 
 
Take out the salmon and cut it in half, for two servings, and pour about half of one bottle of the marinade over the two salmon fillets. Cover with plasic wrap and allow to sit in the refrigerator for 30 minutes or up to overnight.
 


 
Once marinated, prepare your onion mixture. Mix 1/2 a red onion, 1 tablespoon olive oil, and salt and pepper to taste.
 

Then, take two sheets of tin foil, place half of the mixture on each sheet, and then place 1 salmon fillet on top of the mixture. 
 


Wrap each salmon fillet with onion mixture in the tin foil and place on a cookie sheet in the oven for 30 minutes at 400 degrees.


 
When done, remove from the oven and the foil, and serve over a bed of brown rice to enjoy!
