Recipe: Lime Marinated Steak

So, you may or may not have noticed, but I'm on a bit of a freezer meal kick these days; I just love the simplicity that comes with it and being able to have delicious meals at my fingertips - even on weeknights. But if you're not interested in the whole freezer meal deal, you can also marinate this for 30 minutes (when you get home from work) or overnight (putting it in the fridge before you go to bed). I have adapted this delicious recipe, from Once a Month Mom, here, and she adapted it from this Recipe Girl recipe, here. This is seriously so easy and is the perfect summer weeknight meal. I promise you will not be disappointed!


To make the marinade, all you need are the following ingredients:


3 limes, juiced (pretend there's a 3rd one)
2 tablespoons soy sauce
1/4 cup scallions, chopped
healthy sprinkling of red pepper flakes
 
Oh, and of course: steak (strip, sirloin, flank - anything will do!)
 

In a gallon ziploc bag, mix the first four ingredients together.


Then, add the steak.


And place it in the freezer (or marinade for 30 minutes or overnight).


If you've frozen it, when you're ready to eat - defrost overnight in your refrigerator. Grill it or pan saute it with some olive oil and a little of the marinade and then serve with corn on the cob! 


Delicious! Josh thought there was a bit too much acidity with the lime, so if you're not a huge lime fan, you could easily cut back on some of the juice. This marinade made enough for 3 small steaks - so you can double or triple it as needed.
