Recipe: Double Chocolate Cookies

Happy Monday, my dear readers! This morning, I have a wonderfully sweet treat to share with you - delicious double chocolate cookies! I got this recipe from Divine Baking and I followed it almost exactly. The cookies are amazingly butter and flour free and they melt in your mouth with each bite.




Making these cookies is super easy - all you need to make them are the following ingredients:





1 1/2 cups of bittersweet chocolate chips, divided
3 large egg whites
2 1/2 cups powdered sugar
1/2 cup unsweetened cocoa powder
1 tablespoon cornstarch
1/4 teaspoon salt

First, preheat the oven to 350 degrees. Then, melt the chocolate chips in a double boiler. After melted, set aside to cool a bit.





Next, using a hand mixer, mix the egg whites until stiff peaks form and then slowly blend in 1 cup of powdered sugar.





In a separate bowl, blend 1 cup sugar, cocoa, cornstarch and salt.





Mix dry ingredients into egg white - sugar meringue until fully blended.





Then, add the now lukewarm chocolate with 1/2 cup chocolate chips into the dough. At this point, the dough should be stiff. If your chocolate is too warm (I made this mistake), the dough will not stiffen and to remedy this you can either add more powdered sugar or place your dough into the fridge for 15 to 20 minutes.





Once hardened, roll into small balls and dip into the remaining half cup of powdered sugar. Then, place onto greased baking sheets, about 2 inches apart, and bake for 10 to 12 minutes, until the tops crack a bit.





Remove, and cool, in pan, on wire racks.





Once cooled, enjoy the delicious chocolatey treat!
