Recipe: PB Chocolate Pretzel Bites

Good morning and happy Friday! Is it just me, or did this week go by so, so slowly? Okay, it might just be me, either way - I have two of my favorite things to share with you today to end this week - new friends and peanut butter. But not together. Although, I'd be super happy to share peanut butter with my new friends, if they wanted. Anyways. About two months ago, Carley, from Findingravity, awarded me the One Lovely Blog Award! It was super sweet of her, and until now, I haven't even gotten around to properly thanking her. I did meet her at the Blog Better Boston Conference and got to hang out with her on Wednesday night at the Boston Bloggers Meet & Greet and I can 100% confirm that Carley is super awesome. Part of the honor of getting this awesome award, is getting to share it with some of your new favorite blogs, and so today, I'm giving this award to two lovely blogging ladies - both new friends that I've met recently - Lindsay of Lindsay's Look and Emily of Emily's Going Nuts!  Lindsay is a lifestyle blogger, writing about her life - with a dose of fashion, pop culture, and food thrown into the mix! Emily is a fashion blogger who is constantly inspiring me with her awesome outfit choices and her craftiness! Also, coincidentally, Emily and Lindsay were long lost friends from middle school who re-met at the blogging conference that we all attended - it's a small, small world! And now, for my other favorite thing - peanut butter! While not the healthiest snack, these are easy to make and absolutely delicious. They make a great party snack or addition to any meal! And so, without further ado ... Peanut Butter Chocolate Pretzel Bites!


These are not only incredibly easy, but can also be made quickly! I originally got the recipe from here, but I altered it a little bit to better suit my tastes. Here's what you'll need to make the snack:

1 cup peanut butter
2 tbsp melted butter
1/2 cup powdered sugar
3/4 cup brown sugar
pretzels
milk chocolate chips

First, make the peanut butter mixture by combining the peanut butter and melted butter. Melting the butter first allows for it to soften the peanut butter - making it easier to work with.


Then add in the sugars.


Then, using a teaspoon, place some of the mixture onto one pretzel.


Then, place the other pretzel on top of the mixture to create a mini pretzel sandwich. Repeat until you have the desire amount of mini pretzel sandwiches and place on a cookie sheet (or sheets) on top of wax paper and put into the refrigerator for no less than 45 minutes (or into the freezer for 15 minutes).


Next, heat up milk chocolate chips in the microwave (45 seconds at a time) in a microwave safe container until they're all melted. (Note: You could also use a double boiler, but if you're impatient, the microwave is the way to go.)


Then, one by one, dip the mini pretzel sandwiches into the chocolate. Then lay them back to rest on the wax paper. Once the tray is full, place back into the refrigerator (or freezer) until the chocolate is hardened. Then they're ready to eat!


These are a quick and easy treat to make for parties or just to keep around the house! I originally shared this recipe in a guest blogging post on Something Swanky a couple of weeks ago and wanted to make sure that anyone who missed it was able to see this great snack.

  2. UMmmmmmmm... omg. These look AMAZING. I might actually have to stay away from this recipe, because I picture myself making it... and then eating the entire thing in one sitting. ALONE.
