Recipe: Feta & Roasted Garlic Mini-Pizzas

Do you remember that awesome roasted garlic from this morning? Well, look no further, here is a fantastic way to put that garlic to good use! This afternoon, I have a twist on the goat cheese and caramelized onion pizzas that I showed you, here, last week. For this pizza, I used a recipe from For The Love of Cooking that was meant for crostini (and should have included mushrooms), but used it as a mini-pizza topping instead, creating Feta & Roasted Garlic Mini-Pizzas!


I first saw this on Pinterest ages ago, and couldn't wait to try it out on a pizza crust! To make one pizza, you need a 1/2 cup of feta cheese, 1/2 cup of sour cream, 1/2 head of roasted garlic, 1/4 of a sweet yellow onion - sliced, 1 tbsp olive oil, 1 tbsp butter, salt & pepper to taste and an 8" pizza crust (Boboli, or a store brand one works). First, place the pizza crust in the oven per the instructions on the package. I used an Archer Farms Pizza Crust here (from Target) and it needed to be in the oven at 400 degrees for 8-10 minutes.


While the oven is pre-heating, and then while the pizza is baking, you'll prepare the onions and the feta mixture. To caramelize the onions, heat a pan over medium-high heat with the olive oil in it. Then, add the slices of onion with 1 tablespoon of butter. Once the butter has melted, reduce to low-medium heat and allow about 10-15 minutes to cook and caramelize the onions. If you notice the onions getting too browned, you may turn the heat down and if they seem too dry, adding a little more butter or oil will fix that.




Next, mix 1/2 cup of feta cheese, 1/2 cup of sour cream and the roasted garlic together in a bowl. Add a dash of salt and pepper to taste. The recipe called for chopping up the roasted garlic, but I found it easy to simply drop it in and smash it with the back of the spoon before stirring it in with the feta cheese and sour cream. 




Then, when the crust is done, remove it from the oven and spread the feta mixture over it. 




Then, add the onions to the top of the mixture.




Finally, slice it into 6 pieces using your pizza slicer (or regular knife!) and enjoy! 




This delicious pizza makes for a great appetizer or evening snack. It's quick, easy AND delicious - who could ask for anything more?
