Cheesy, Meaty Mini Rigatoni (Or the Not So Bolognese Pasta)

The other night I was craving a hearty pasta. I sort of really wanted bolognese, but I didn't want to go through the trouble of making bolognese. Chopping veggies just wasn't really how I wanted to be spending my time. Also, I wanted something creamier than bolognese. Creamier and ... cheesier. And so, this cheesy, meaty rigatoni was born. 


This was so easy to throw together and I promise it will not disappoint. Unless you don't like pasta with meat sauce. Or if you have a fiance who doesn't like pasta with meat sauce. Not that I would know. Oh wait... Anyway, here are the ingredients you'll need:



3/4 lb. mini rigatoni
2 cups marinara - your favorite brand
1/4 cup mozzarella
1/4 cup asiago cheese
1/4 cup sour cream
1 lb. ground beef

First, cook your pasta and set aside. Then, cook your ground beef in a large skillet over medium high heat.



Once fully browned, add 2 cups of your favorite red sauce - I used  marinara from Nanina's in the Park in New Jersey - to the meat and stir together.


Then, add the pasta in the skillet.


Mix well and then add the mozzarella and asiago cheese. 




Next up - add the sour cream! You could also use a bit of regular cream here instead, if you didn't have sour cream on hand, but I had sour cream and it worked well. 



Mix well and serve with a bit of parmesan sprinkled over the top and enjoy!


This made enough for about 3 good sized dishes of hearty pasta. If you're cooking for four, just add a 1/4 lb of pasta and there will be slightly less meat per person, but the dish will still be delicious! Any more people, and make sure to increase the other ingredients as well.
