The Perfect Sides: Green Vegetables {simply thanksgiving}

When it comes to Thanksgiving, I like to pile my plate up with all of the delicious food at the table - and that includes some of my favorite vegetables. I am a huge fan of green bean casserole, but I also think that there's a place at your Thanksgiving table for a new twist on an old vegetable favorite - and maybe room to add a new favorite into your traditional meal. This morning, I'll be showing you a couple of my favorite vegetable recipes - Prosciutto Wrapped Asparagus and Bacon Wrapped Green Beans. 


I first saw a picture of this on Pinterest, but unfortunately when I went to visit the link - I was warned it was spam and told that it had been blocked. Fortunately, the pin had noted a couple of the ingredients and so I played around with it until I found something that worked for me. First, you'll need to grab your ingredients: 3/4 lb of green beans, 8 strips of bacon, 1 cup of soy sauce and 3 tablespoons of brown sugar, plus about 1/8 teaspoon each of salt and pepper.


In a bowl, mix together the green beans, soy sauce, brown sugar, salt and pepper.



Then, take a handful of green beans - about 13 green beans - and wrap them in 2 strips of bacon. Fair warning - this step gets a little messy...



Place them in a greased baking dish and cook at 375 degrees for one hour. If you like less well-done vegetables, you can take these out of the oven 10-15 minutes earlier.



And enjoy!


And, inspired by the bacon wrapped green beans - I created prosciutto wrapped asparagus.


If you've also made the pear and prosciutto bites - this is a great way to use up some of the leftover prosciutto! First, grab your ingredients - 1 lb. of asparagus, 3 tablespoons olive oil, 1/4 teaspoon salt, 1/4 teaspoon pepper, and 4 slices of prosciutto.


In a bowl, mix together the asparagus, olive oil, salt and pepper. Then, grab 5-6 spears of asparagus, and wrap in one slice of prosciutto. Like it was with the green beans, this step can be a little messy...


Then, place in the oven for 1 hour at 375 degrees. For slightly less well done vegetables, you can remove from the oven 10-15 minutes earlier.



After an hour in the oven, voila! You can enjoy your veggies!
