Good Morning and happy May Day! Today, on this rainy Tuesday morning, I want to share with you a delicious recipe for crock pot turkey meatballs. Originally from Skinnytaste, I altered this recipe to make it a little less skinny and to add a little more spice back into it. This is great meal to prep on weekends and use during the week for a quick and easy weeknight meal.
First, gather your ingredients for the meatballs and the sauce.
Meatballs
1 lb. ground turkey
1/3 cup italian bread crumbs
1/4 cup parmesan cheese
1/4 cup parsley
1 egg (not pictured)
2 cloves of garlic, crushed
salt and pepper
Sauce
2 tablespoons olive oil
4-5 garlic cloves, finely chopped
28 oz. can crushed tomatoes
1/4 tsp. thyme
1/4 tsp. basil
1/4 tsp. oregano
1/4 tsp. crushed red pepper
salt and pepper
parsley, for sprinkling
First, mix together the turkey, bread crumbs, cheese, parsley, egg and garlic in a large bowl, using your hands to blend it.
Form small meatballs with your hands and then sprinkle with salt and pepper. Set aside.
Saute olive oil and garlic for sauce in a small pan over medium high heat. Cook until lightly browned, but not burnt. Then, place the crushed tomatoes into your crock pot, adding the garlic and olive oil, and thyme, basil and oregano. Then, sprinkle salt and pepper to taste.

ReplyDeleteFor non-crockpot users, start by making the sauce in a large pan, over medium-high heat, first saute-ing the garlic and oil, then adding the tomatoes and spices, and then setting it to simmer for about 15-20 minutes, stirring occassionally. Then, make your meatballs and add them to the sauce , cooking for about 20-25 minutes, until cooked through. And then you can enjoy!
