Recipe: Pre-Cooked Chicken

This morning, I showed you an amazing recipe for chicken corn chowder, here, and noted that the recipe needs cooked chicken. While you can buy already cooked (and overpriced) chicken at your local grocery, if you want to be able to add cooked chicken to your meals all week long, then here's an easy way to do it.


First, set out your chicken, cutting board, knife, salt and pepper.


Then, wash and dry your chicken breasts, and remove the fat. Then season lightly on each side with salt and pepper.


Sear over medium high heat with 2 tablespoons of olive oil, approx. 3 minutes per side.


Then, remove from the pan, slice chicken and place back in the pan to sear all sides for another 1-2 minutes, until cooked throughout. Remove from the pan and set the chicken aside for future use!


You can use this in soups, salads, or for quick sandwiches during the week. What prepping do you do on the weekend to make weekly meals easier? This is one of my favorite easy ways to prep!
