World's Greatest Ribs

Are you ready to see the World's Greatest Ribs? I'm not even kidding. They are so great, the name gets to be capitalized. The recipe that I am about to share with you is in fact a recipe for the World's Greatest Ribs. And no, they weren't smoked on a grill or smothered in barbecue sauce. They were slow-roasted in the oven and coated with a sweet apricot glaze. And they were absolute bliss. I made them for Super Bowl Sunday and, while the team that we had hoped would win didn't (making for a very sad evening), at least we had these ribs to drown our sorrows in.

This recipe is courtesy of my wonderful and talented mother. It's one of her favorite recipes and she put it in a cookbook, published by the Dickinson County Historical Society in Abilene, KS (where my family is from), that she, my grandmother and I were all featured in as three generations of cooks.

This recipe does take some time and preparation, but I promise you that the results are absolutely worth it. First, start with about 8 lbs of ribs (or you could halve or quarter the recipe).

Beef ribs can be used instead.
Then, mix together 1 tablespoon salt, 1 tablespoon dried thyme, 1 1/2 teaspoons ground allspice, 1 1/2 teaspoons ground ginger, 1 teaspoon black pepper and 1/2 teaspoon of cayenne pepper.



Then, cover 2 baking sheets with foil (this gets messy) and place your broken down ribs onto the sheets. Next, rub the spice mixture all over the ribs.


I prepared these early in the morning and then wrapped them in foil until I was ready to cook (you want to eat them hot out of the oven).


When I was ready (I put them in the oven at 5 and they were done at halftime just after 7:30), I pre-heated my oven to 300 degrees and got ready to slow roast the ribs for 2 and a half hours. After placing my ribs in the oven (without the foil on top), I got to work making the glaze for the ribs.

I mixed together 2 tablespoons of vegetable oil, 1 medium onion - finely chopped, 2 cloves of garlic - minced, 1 16 oz. jar apricot jam, 2 tablespoons dijon mustard, 2 tablespoons red wine vinegar and 2 tablespoons of soy sauce.


Mix it together and put it aside until you're ready to use it. When the ribs have been cooking for 2 hours, spread the glaze over the ribs and allow to cook for 20 more minutes. Then, remove the ribs to re-glaze and  raise the oven to temperature to 500 degrees, and place the ribs back in the oven for 10 more minutes.

Finally, remove the ribs from the oven, immediately cut them (I did 2 ribs per cut) and serve!


Mmm ... heaven. These ribs are to die for and Josh and I will be eating leftovers all week! This is definitely a keeper recipe and I plan on making these for a long time to come!
