26 Soups: #4

Happy Weekend! With the cold weather lingering outside, I don't think I can imagine a better way to warm up than with some delicious homemade tomato soup! I made this soup last night and plan to enjoy it with a delicious grilled cheese sandwich this weekend while the snow is coming down outside. This recipe is originally from Everyday Occassions by Jenny Steffens Hobick. I halved the recipe, but if you want to see the full list of ingredients, please go visit Jenny's site.

This soup tastes amazing and was incredibly simple to put together! First, gather up your ingredients:

Sorry about the slight blur!
For the halved recipe (making approx. 2 servings) you'll need 1 1/2 cloves of garlic, 1 tbsp olive oil, 1 14 oz can of crushed tomatoes, half a 14 oz can of whole tomatoes, sea salt / sugar / pepper to taste, 2 tbsp light cream and 1 1/2 tbsp basil.

To start, saute the garlic and olive oil in a medium saucepan over medium heat.

Mmm... this is my favorite smell - reminds me of bruschetta!
Then, add the crushed tomatoes.

And then add the whole tomatoes (there are about 8 in a can - use 4) one at a time, squeezing each to break it up before adding it to the pan.

Next, add the chicken stock, as well as the salt, pepper and sugar to taste.

Let this cook over medium heat for 10 minutes. Then add the basil and light cream.

Serve hot!

I am looking to get a real camera. Anyone know anyone selling an
old one for not a  lot of money - please send them my way!
I added Parmesan cheese to the top as well and it melted very quickly fresh out of the pan! I stored the rest in this container and dropped it in my fridge to enjoy the rest of the soup this weekend!

If you live in the Northeast, how are you planning to keep warm this weekend? Cooking some delicious comfort food? Or maybe baking up a storm? I'm looking forward to finishing up our entryway, reading some good books and seeing how big of a mess I can make in our kitchen! Hope you all have a wonderful and warm weekend - wherever you are! Happy Friday!

For the record this is my 4th soup in my 26 Soups Project. You can see the others here, here and here!

  2. Tomato Basil soup is my favorite! This weekend my family is coming for a visit to celebrate my daughter's 5th birthday BUT if it snows the party might have to be rescheduled and that would mean spending the day in our jammies in front of the fireplace eating huge slices of Ariel the Mermaid cake.
    Have a nice weekend!
