Happy Weekend! With the cold weather lingering outside, I don't think I can imagine a better way to warm up than with some delicious homemade tomato soup! I made this soup last night and plan to enjoy it with a delicious grilled cheese sandwich this weekend while the snow is coming down outside. This recipe is originally from Everyday Occassions by Jenny Steffens Hobick. I halved the recipe, but if you want to see the full list of ingredients, please go visit Jenny's site.
This soup tastes amazing and was incredibly simple to put together! First, gather up your ingredients:

To start, saute the garlic and olive oil in a medium saucepan over medium heat.

And then add the whole tomatoes (there are about 8 in a can - use 4) one at a time, squeezing each to break it up before adding it to the pan.
Next, add the chicken stock, as well as the salt, pepper and sugar to taste.
Let this cook over medium heat for 10 minutes. Then add the basil and light cream.
Serve hot!

This weekend my family is coming for a visit to celebrate my daughter's 5th birthday BUT if it snows the party might have to be rescheduled and that would mean spending the day in our jammies in front of the fireplace eating huge slices of Ariel the Mermaid cake.
