Recipe: Crock Pot Chicken Parm

Happy Friday! Are you ready for the weekend? I have a fantastic recipe for you to try over the next couple of days - girl tested, boyfriend approved! Check out this amazing Crock Pot Chicken Parmesan recipe that I found at Chef-in-Training (an awesome blog I follow, that you should follow too!). When I saw it, I immediately knew that it would be a winner, and oh boy, was I right!


This recipe makes 4 pieces of chicken parmesan, so it's great for 2 people and some leftovers. In order to make this, you'll need:

4 boneless, skinless chicken breasts (I use Perdue's perfect portions)
1/2 cup Italian bread crumbs
1/4 cup parmesan cheese
1/4 tsp black pepper
1/4 tsp salt
1 tbsp olive oil
1 egg, beaten
shredded mozzerella cheese (you could use sliced, if you prefer)
jarred marinara sauce (I used TJ's basil marinara bc Chef-in-Training recommended it)

First, set up your crock pot and drizzle your olive oil into the pot. Then, prepare your chx cutlets. After you've trimmed them and cleaned them, set them aside to prepare your coating. For this part, you'll need the bread crumbs, parmesan cheese, black pepper and salt.


Mix all of them together in a bowl.


Then, take your egg, crack it, and beat it in another bowl.


One at a time, take a chicken breast, and dip it in the egg mixture ...


... and then the bread crumbs mixture.


Repeat this step three more times (with each chicken breast), and when you're finished, place them into the bottom of the crock pot.


Next, take your handy dandy pre-shredded (or pre-sliced if you're going that route) mozzerella ...


... and spread it over the top of the chicken breasts.


Then, take your handy dandy jar of sauce ...


... and spread it over the top of the cheese.


Then cook it on high for 3 to 4 hours (or on low for 6 to 7) ...


... and serve with your favorite pasta and some garlic bread!


It was phenomenal! Josh went back for seconds and then had leftovers for lunch this week! This recipe comes very highly recommended from our household.

  4. Tried this recipe and the chicken came out really soggy :( any tips?

    1. Oh no, I'm so sorry! I'm not sure exactly what you mean by soggy, but maybe reduce the amount of sauce you used and not put in a whole jar of the marinara sauce? That might help with the some of the liquid. Or you could also cook it for a bit longer to reduce some of the sauce. I only cooked it for 3 hours (on high), but 4 would be fine!
